Liven up your Easter with these delicious recipes.
Prawn caesar salad
- Cos or butterhead lettuce, washed and broken up
- 3 roma tomatoes, quartered
- 2/3 cup your favourite Caesar salad dressing
- 1 avocado, sliced
- 1kg cooked local prawns, peeled
- 1/4 cup finely grated parmesan
- Lemon to dress
Mix lettuce and tomato with dressing (reserve two tablespoons of dressing for later) and place into a bowl. Layer with avocado slices.
Top with the prawns and sprinkle with parmesan. Add 1 teaspoon of lemon juice to leftover dressing and mix together. Swirl over the top of the prawns.
Barbecue garlic bugs
Spread garlic butter over bugs. Balance the bugs with the flesh facing up on barbecue grill, with the hood down. Cook until butter is melted and slightly coloured. Alternatively, these can be placed under the oven grill.
