Recipe: Lizzie’s luscious relish

Reader Lizzie shares her tomato and chilli relish, which can be stored in the fridge for up to a week, or frozen. She says it is great to use on chicken, fresh crusty bread and burgers.


  • 500g ripe tomatoes, chopped
  • Option: dash of tomato paste to add redness
  • ½ cup brown sugar
  • 1 tbsp balsamic vinegar or cider vinegar
  • 2 chillies, seeded and finely chopped
  • 1 garlic clove, crushed
  • Fresh ginger
  • Pinch cloves
  • Chopped basil
  • Salt and pepper


Combine all ingredients in a heavy-based saucepan. Boil, then reduce heat and simmer for 20 to 30 minutes until mixture thickens. Adjust seasoning and bottle.
