- 500g ripe tomatoes, chopped
- Option: dash of tomato paste to add redness
- ½ cup brown sugar
- 1 tbsp balsamic vinegar or cider vinegar
- 2 chillies, seeded and finely chopped
- 1 garlic clove, crushed
- Fresh ginger
- Pinch cloves
- Chopped basil
- Salt and pepper
Combine all ingredients in a heavy-based saucepan. Boil, then reduce heat and simmer for 20 to 30 minutes until mixture thickens. Adjust seasoning and bottle.
