Recipe: Super-easy chocolate cake

This week our home cook competition continues with this delicious chocolate cake recipe from reader Joanne. It’s sure to keep the kids and grandkids happy.

SUPER-EASY CHOCOLATE CAKE

INGREDIENTS

  • 1⅓ cups plain flour
  • 1 tsp bicarbonate of soda
  • ⅓ cup cocoa powder
  • 1 cup caster sugar
  • 1 cup buttermilk (normal milk is fine)
  • 2 eggs
  • 125g butter, melted, cooled
  • 1 tsp vanilla essence
  • Raspberries and strawberries for decorating

 

CHOCOLATE ICING

  • 1⅓ cups pure icing sugar
  • 1½ tbsp cocoa powder
  • 20g butter

 

METHOD

Preheat oven to 180°C. Lightly grease a round cake pan.

Sift flour, bicarbonate of soda and cocoa powder into a bowl. Add sugar and stir. Mix buttermilk, eggs, melted butter and vanilla in a jug. Make a well in the centre of the flour mixture and pour the milk mixture into it. Beat on a low speed until combined. Increase beater speed and continue for another three minutes.

Pour mixture into prepared pan. Bake for 40 to 45 minutes or until a skewer comes out clean. Allow to cool.

Make the icing by combining the icing sugar with cocoa powder. Add the butter and beat until fluffy. Add more icing sugar and butter as needed.
